Caroline Palma de Azevedo
Caroline grew up in Brazil’s southernmost state, Rio Grand do Sul, in a city called Caxias do Sul, which is close to the main and oldest viticultural area of the country (Vale dos Vinhedos). She studied pharmaceutical sciences in Porto Alegre at a university called UFCSPA, leaving before her final year to take on a chef role. This led her to complete a chef polytechnic course, and to work as a chef mainly in Brazil, then with stages including at Noma, Relae and Asador Etxebarri. She moved to London in 2019, first working at Bottle Apostle, and later joining Newcomer wines briefly as their logistics manager before taking an opportunity at Davy's in trade sales. Caroline then moved to Pol Roger in a prestige on-trade role before joining Flint in early 2026. Caroline volunteers each year with different charities, and is part of a community pottery studio in southeast London where she lives with her partner Freddie who is a painter and multimedia artist. Caroline holds a WSET Diploma and a French sommelier consultant diploma from CAFA in Bordeaux.
