Based in the very sleepy village of Montigny, about 10 miles outside Sancerre itself, Henry Natter and his son, Auguste, are continuing to produce some wonderful Sancerres. Most of his vineyards are dotted around the village and he works hard to get the best out of them. Many are on quite steep slopes, which provide advantageous expositions and help bring the grapes to full ripeness.
Since becoming involved, Auguste has reduced the amount of oak his wines see, preferring to age a much higher proportion of the juice in stainless steel. This allows the natural minerality of the wines to express itself and complement the richness of the fruit that he achieves through their diligent vineyard work. They also produce a delicious, dry rose, made from Pinot Noir, which is fantastic with fish.
