There are various Defaixs in Chablis but this domaine is by far the best and in fact ranks in Allen Meadows' (aka Burghound) top 10 Chablis Domaines. The style is very much classic Chablis with emphasis on minerality and bite. The straight Chablis is aged in stainless steel whilst the 1ers Crus see some oak but are still very much about terroir expression. The wines age very well, too, should you wish but a glass of the 08 Chablis now with some seafood would be just perfect!
